Griessnockerlsuppe (Soup with semolina dumplings)

Ingredients

For soup:
3.5 l water
600 g beef (rib)
4 - 6 marrowbones (about 2 cm)
100 g onions
70 g carrots
parsley
For semolina dumplings (appr. 16):
100 g semolina
50 g butter
1 egg
pinch of salt

Directions

1. For soup:
clean beef with warm water, put beef and bones in cold water and bring water to a boil, get rid of the foam that is building
Cut onions and roast them.
Add onions to the soup.

2. After 1 1/2 hours, add the carrots and salt.
Add water if it is below 1.5 l
Sieve soup.

3. For dumplings:
Cream the butter
Whisk the egg
Stir in with butter

4. Work in the semolina
Let it rest for 15 minutes

5. With a spoon try to form small dumplings
Add dumplings to boiling salt water

6. Let them cook for 3 minutes
Refresh and let them rest for 10 minutes (lid closed)
